Roasted Butternut Squash

A great side for fall meals.

Ingredients (serves 4)

  • 1 to 2 Tbsp. olive oil
  • 1 butternut squash, peeled and cubed
  • salt and pepper to taste


  • Preheat the oven to 375 degrees. Place your squash on a foil-lined baking sheet. Pour the olive oil over top. Sprinkle with a little salt and pepper then toss well to coat.
  • Place the pan in the oven. Bake the squash for 25 minutes or until they reach a level of doneness that you’d prefer. Abby likes the squash less soft so I cook hers for around 20 minutes.
  • Serve immediately.
