Thick and hearty pancakes, perfect for a winter weekend morning!
Ingredients (Makes 8 pancakes)
1 cup whole wheat pastry flour
2/3 cup oats
2/3 cup pumpkin puree
2 Tbsp. unsweetened apple sauce
1/4 tsp. sea salt
1/2 tsp. vanilla extract
1 tsp. baking powder
1/2 tsp. baking soda
1 to 1 1/2 cups of water
Pure maple syrup
Instructions
Combine all ingredients, except for the water and maple syrup, in a medium bowl. Then, slowly add the water, while stirring, until you've reached your desired consistency. I like a thicker pancake, so I typically use 1 cup of water. If you like a thinner pancake, use more water.
Cook pancakes over medium heat in a large skillet or on a griddle.
