Deconstructed guacamole. Perfect as a side dish or light lunch!
Ingredients (6-8 servings)
1 pint grape tomatoes, halved
1 yellow bell pepper, seeded and diced
1 (15-ounce) can black beans, rinsed and drained
1/2 C small diced red onion
2 tbsp (2) minced jalapeno peppers, seeded (can leave seeds in a for a spicy kick!)
1 C corn kernels
1/2 tsp freshly grated lime zest
1/4 C (2) freshly squeezed lime juice
1/4 C olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp minced garlic
1/4 tsp ground cayenne pepper (optional)
2 ripe avocados, seeded, peeled, and diced
Instructions
Prep all vegetables except the avocados. Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, corn kernels, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper (optional) and pour over the vegetables. Toss well.
Just before you're ready to serve the salad, prep and then fold the avocados into the salad. Enjoy!
