Black Bean Vegan Brownies

Dark decadent fudge like black bean brownies are a delicious alternative to regular brownies. They are gluten free and low in sugar.

Ingredients (16 pieces)

    For the Brownies
    • 1 15oz Black Beans, rinsed and drained
    • 1/3 cup coconut oil, melted
    • 1/3 cup raw sugar or agave nectar
    • 1/3 cup raw cacao
    • 2 tsp. vanilla extract
    • 1 tsp. instant coffee
    • 1/2 ripe banana (as egg substitute)
    • 1/2 tsp. baking powder
    • 1/4 cup chocolate chips
    • 1/4 cup walnuts, chopped
    • (optional- 1 scoop chocolate protein powder)


    • Preheat oven to 350 degrees. In a large bowl food processor, place well rinsed and drained black beans and coconut oil. Blend for 20 seconds. Add remaining ingredients except chocolate chips and walnuts.
    • Blend until smooth and batter like, about one minute.
    • Pour into 8x8 baking dish lined with parchment. Sprinkle chocolate chips and walnuts throughout batter.
    • Bake at 350 for 35 minutes.
    • Let cool 10 minutes.
    • Remove brownies with parchment onto a cooling rack.
    • Cut into 16 pieces once cool.
    Brownies will be soft and fudge like, refrigeration is suggested.
