Delicious chocolate protein cookies with a hidden healthy twist: broccoli!

Ingredients (9 cookies)

  • 1 cup broccoli, boiled and pureed
  • ¼ cup chocolate egg white protein
  • 2 rounded T cocoa powder
  • ¼ cup almond flour
  • ¼ cup coconut flour
  • 2 rounded T almond butter
  • ¼ cup coconut oil
  • 1 egg
  • 1 egg white
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 heaping tablespoon pumpkin pie spice
  • 2 droppers stevia
  • 1 T vanilla extract

Instructions

  • Preheat oven to 350 degrees F.
  • Combine all wet ingredients.
  • Whisk in all dry ingredients until just combined.
  • Spoon heaping tablespoon of batter onto ungreased baking sheet, about 1/2 an inch apart.
  • Bake for 15-20 minutes, or until edges brown slighty and cookie is firm.
  • Allow to cool.
*note, if you are having trouble pureeing your broccoli, try blending it with the egg white.
