Triple Layer Raw Caramel Chocolate Mousse Squares

It looks like a lot of ingredients, but it is totally worth it and comes together very quickly. Perfect for a dinner party dessert, or just to share with some one else on a Tuesday night. Chocolate, caramel and a sweet, nutty base, all piled together in a raw delight. How could you go wrong?

Ingredients (16 Squares)

    For the Base
    • 1 1/2 cups dried mulberries
    • 1/4 cup cashews, soaked
    • 3 tbsp raw honey
    • Pinch of salt
    • 1 tsp vanilla extract
    • 6 medjool dates
    For the Caramel
    • 1 1/2 cups dates, soaked in boiling water
    • 1 tsp vanilla
    • Pinch salt
    • 1 tsp almond milk
    For the Chocolate Mousse
    • 1/2 cup cacao
    • 1 extra ripe banana
    • 1/2 avocado
    • 2 tbsp coconut oil, melted
    • 1 tbsp raw honey
    • 1 tbsp maple syrup
    • 2 tbsp cashew butter
    • 1 tsp vanilla
    • Pinch salt
    • 1/4 cup almond milk

    Instructions

      For the Base
      • Place all ingredients in the food processor and blend until a ball forms and all the ingredients stick together. Add a tsp of almond milk if not enough liquid to start blending. Once a ball forms, flatten into an 8x8 inch square pan and place in the freezer.
      For the Caramel
      • Place dates, salt vanilla and milk in a food processor and blend until a smooth caramel consistency forms, scraping often. Once ready, remove base from freezer, spread evenly over top and return to freezer.
      For the Chocolate Mousse
      • Place all ingredients in the food processor and blend until a smooth consistency forms, adding extra almond milk if necessary to reach a thick pudding texture. This part of the dessert is not frozen, so I recommend storing it in the fridge and then spreading it on the two bottom layers just before serving. When you are ready to do so, spread evenly over top of the caramel layer and cut into squares. Serve immediately.
