  • 1 (14oz) can garbanzo beans, drained and rinsed
  • 1 sweet potato, peeled and diced into 1/2" pieces 
  • 1 1/2tsp curry powder
  • 1tsp cumin
  • 1/2 to 3/4tsp garam masala (add 3/4 if you like more spice)
  • 1T fresh grated ginger
  • 2 cloves garlic, minced
  • 1 pinch of sugar
  • dash cinnamon
  • 1 (14oz) can organic fire-roasted tomatoes
  • 1 (14oz) light coconut milk
  • 2C vegetable broth 
  • 2T natural peanut butter
  • 1/2C red lentils, drained and rinsed 


  • Place all ingredients in a crock-pot. Stir. 
  • Cook on high for 1 hour, then reduce to low for additional 3-4 hours until potatoes and lentils are tender. 
  • Serve with yogurt, cilantro, and chopped peanuts as garnish. 
  • Enjoy!
