Chicken Cashew Satay

One night last week, I used some leftover chicken breasts that I had pre-cooked along with a bag of Asian Medley Frozen Vegetables to create a stir fry in my wok. I flavored the dish with this satay peanut sauce I found at Trader Joes after checking out the nutrition label which was low in sodium and sugar considering it was a sauce. It had a nice hint of spice and peanut flavor without being overwhelming and I thought it was comparable to the Thai takeout we had earlier this month.
