Reduced fat cream cheese, Greek yogurt and shredded cheddar are mixed with diced peppers to form a creamy center for oven-baked Panko-rolled 'poppers.' They're a little bit messier than traditional poppers (as in you might need a plate and fork to eat them), but the calories and fat you'll save is well worth it! These are a great make-ahead appetizer since you can store the pre-cooked poppers in the freezer for several weeks.
